West Orange Resident Appears On “The Chew” and Helps To Promote Health and Wellness in Public Schools

WEST ORANGE, NJ - West Orange resident CC Minton is happy to have a husband that can out cook her in the kitchen. Only the other day, CC’s boys raved about her husband Doug’s fritata, and his collard greens are to die for. But CC wanted to have a recipe that she could call her own…one that could compete with her husband, who, according to their two boys, ‘cooks with love.’ Through an intriguing series of events, CC got that opportunity when she was selected to appear on the February 26 episode of ABC’s “The Chew” and became a graduate of their first ever, 2013 Cooking School.
With co-hosts Michael Symon, Carla Hall, and Mario Batali, world class chefs, CC learned how to prepare a delicious dish made with:
· 2 pounds Chicken Breasts (boneless; skinless; pounded to 1/4-inch thickness)
· 1 1/2 cups Flour
· 3 Eggs
· 1 cup Panko Breadcrumbs
· 1 cup Parmigiano-Reggiano (freshly grated)
· 1 teaspoon Red Chili Flakes (optional)
· 5 tablespoons Extra Virgin Olive Oil (divided)
· 1 tablespoon Red Wine Vinegar
· 4 ounces Cherry Tomatoes
· 4 ounces Bocconcini (small Mozzarella balls)
· 1/2 Red Onion (thinly sliced)
· 1/2 cup Basil leaves
· Salt and Pepper to taste

Now that CC has a family signature dish to call her own, there are a few other things you might like to know about this inspiring member of the West Orange Community. Long interested in and committed to health and wellness, CC will be celebrating March as National Nutrition Month with free demonstrations of gluten-free granola products at Whole Foods in West Orange.
CC is also an integral part of the Health and Wellness Committee in West Orange. The Committee was formed a little over a year ago to address health and dietary issues in the public schools. According to Steve Melendez, Assistant Principal at Edison Middle School and head of the Wellness Committee, CC has played an integral part in the development of new and innovative ideas to provide better nutritional choices in school cafeterias and in designing exercise initiatives that will promote physical fitness among West Orange youth.
Carol Fastiggi, a West Orange parent and Zumba instructor, is currently teaching Zumba classes for West Orange High School students. A student survey to provide ideas for dietary improvements is also in the planning stages. West Orange Principals have worked with Sodexho, the school district’s food service provider, to include healthier choices on its daily menus. For example, Edison Middle School has a “Grab N Go” program which allows students to purchase healthy breakfast choices like bagels and fresh fruit, and bring them to class.
The Health and Wellness Committee is also developing a website that will soon appear on the master www.woboe.org site. Elementary schools will be involved as the Committee works with Physical Education Teachers to promote fitness via The President’s Challenge Fitness Program, Dance-a-thons, and student pledges. In June, all West Orange Schools will participate in a Physical Fitness week.
