The Best Brain Food You Should Be Eating

I am a mother, a nutritionist, and a business owner, with the holiday season approaching. I needed more brain power and wanted to find a natural and effective way to re-fuel. Below is my recipe for Vegetable Frittata. Eggs are my favorite brain food!
Vegetable Frittata (Can be breakfast, lunch, or dinner for two)
6 Eggs (only 4 yolks)
1/3 cup Whole Milk
2 Tbsp. olive or canola oil
1/3 cup onion
1/3 cup mushrooms
1/3 cup spinach or broccoli
Add desired amount of either parmesan, mozzarella, swiss or provolone cheese
1 can cannelini beans
6 small redskin potatoes. Chop into cubes.
Begin to heat pan (medium) and coat with oil. When heated, put in all vegetables and mix occasionally. Whisk eggs with whole milk. Mix in salt/pepper to taste. When vegetables are soft and onions are translucent, put in eggs. Lower heat and cook eggs for 5 to 7 minutes or until firm.
