Summer Fun at ECLC School in Chatham

Most of our students come to school for ESY (extended school year) in July. I am happy they do, because I get to visit the classrooms and go with them on trips! Classes are studying many topics this summer, including the Beatles 50th anniversary of arriving in the United States, and the 350th anniversary of New Jersey. I get to go on trips to the Chatham library, Dunkin Donuts, Kings, the Livingston Mall and the Summit Arboretum.
We have a fantastic vegetable garden that is growing snap peas, Swiss chard, spinach, lettuce, tomatoes, basil, watermelon and a pumpkin! Last week we made kale chips to have at lunchtime. I wonder if they make kale dog biscuits? We are having a fun summer at ECLC. Happy summer to everyone!
