Randolph Diner Reveals Expansion Plans; New Businesses Opening in Randolph Commons

RANDOLPH, NJ- Twenty-two years ago, the Randolph Diner was born when Bobby Spiropoulos took over a small 50 seat café/sandwich shop on the corner of Route 10 and Center Grove Road.  The business enjoyed early success in the cozy space, but it didn’t take long for Spiropoulos to dream up bigger aspirations of what the future could hold for his business.

One year after opening, they went through their first growth spurt with an addition to expand the seating area in order to fit more customers. Years later came a second expansion in which they opened up the back room with the bar area, and in the process they bumped the neighboring business Express Cleaners over a bit.  

Spiropoulos’ vision was to create a family-friendly restaurant where he could serve the community by offering great food, great value, and a welcoming atmosphere.  He explained, “We offer a 10 percent discount to Senior Citizens every day, and we have loyalty cards for our frequent guests."  The diner is rarely, if ever, closed.  Spiropoulos continued "We are open on every major holiday, and we stay open serving food during every major storm.” 

Fast forward to 2014, and the plans are in motion for the third, and by far the most dramatic expansion of the property. Behind the rear parking lot, the Randolph Commons property was built and largely completed by the end of 2013. The businesses that will occupy that space ( some are already there and others are coming soon) are the following:

Super Cuts

Frozen Yogurt and Cliffs Ice Cream

Express Cleaners and Tailors (moving from the existing space right next to the Diner)

Malina Fashions

Randolph Computer Solutions

Art of Nails (moving from Rockaway Mall)

Brooklyn Bagels and Deli (featuring Brooklyn style sandwiches)

The expansion work on the Randolph Diner is expected to begin in early spring.  The restaurant will expand laterally into the existing cleaners’ space, and upward, adding a second floor to create an upstairs party and catering room.  The plans call for a complete facelift on the outside, which will include a new look exterior, and a new front entrance facing what is now the back parking lot.  There will also be outdoor patio seating bordering Center Grove Road.

Spiropoulos is excited about the expansion and wanted to make sure the community knew that the diner will be open for business through all the renovations.  He especially wanted to make sure the high school kids knew this.  He proudly explained why, stating “Randolph High School kids have voted Randolph Diner ‘The Best All Around Restaurant’ for about ten years in the yearbook.”  He is hoping to keep that streak alive for many more years to come.
