Put Your Westfield Farmer’s Market Finds to Use

WESTFIELD, NJ — The Westfield Farmer’s Market, open each Saturday from 8 a.m. until 2 p.m. through Oct. 26, features a wide array of local and gourmet foods, from frozen crabcakes to fresh cheeses to gourmet olive oils and vinegars to pies and cookies. On Aug. 17, with so much Jersey Fresh produce at its peak, shoppers filled their bags with local specialties such as corn, eggplant, peppers, peaches, early apples and, of course, tomatoes.
To put some of those sweet Jersey tomatoes to great use, Becky Solheim and Jackie Mittlehammer of Savory Spice Shop, 138 East Broad Street in Westfield, offered this recipe for Jerusalem Tomato Salad.
Jerusalem Tomato Salad
- 2 pita breads, cut into 8 pieces
- 1/2 cup extra virgin olive oil
- ¼ cup lemon juice
- 4 tsp. Za'Atar Seasoning
- 2 scallions, thinly sliced
- 1/2 tsp. garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. coarse ground pepper
- 3 large tomatoes, seeded and chopped
- 1 Tbsp. fresh parsely, chopped
Preheat oven to 350 degrees. Place pita slices on a cookie sheet and toast for 12 minutes. Remove from oven and reserve.
To make vinaigrette, whisk together olive oil, lemon juice, Za’Atar, scallions, garlic, salt and pepper. In a large bowl combine vinaigrette with remaining ingredients and let sit 10 minutes. Serve with pita.
