Kitchen Chemistry at the Scotch Plains Public Library

SCOTCH PLAINS, NJ -- Dr. Benny Chan of The College of New Jersey (TCNJ) School of Science will be at the Scotch Plains Public Library (1927 Bartle Ave.) on Monday, June 30 at 7:00 p.m. to demonstrate how chemistry impacts the food we enjoy.

Dr. Chan teaches a course at TCNJ that allows students to break down recipes, experiment with certain aspects, and explore chemical principles such as thermodynamics or denaturation. He will bring a taste of that class to the library by discussing the science behind dishes such as pancakes, caramelized bananas, and liquid nitrogen ice cream. Samples will be included.
