Fall is here at last, the crisp cool air is rolling in and soccer and football games are in full swing. Now is the time to take the kids apple and pumpkin picking and my personal favorite, to bake fall treats. These Cream Cheese and Caramel Frosted Apple Cupcakes topped with Mini Chocolate Chips and Heath Bits are a bite sized taste of fall. Don't be fooled by the long winded title, these cupcakes are completely uncomplicated to make. They combine the convenience of a boxed cake mix with a quick and easy homemade frosting and store bought toppings.
Starting with a Golden Butter Cake Mix as the base, apple cider and apple butter transform the mix into a sweet and spicy harvest apple cake. The cupcakes are then topped with a velvety cream cheese frosting that takes only a few minutes to mix together. A drizzle of store bought caramel and a sprinkle of mini chips and Heath Bits makes for a dessert to impress both kids and adults alike. Try these out at a fall potluck or surprise your family with an afternoon treat - they will be gone in no time!

Cream Cheese and Caramel Frosted Apple Cupcakes
Makes 2 Dozen
1 Box Golden Butter Cake Mix
1 Stick of Butter, Melted and Cooled
1/2 Cup Apple Cider
1/3 Cup Apple Butter
Cream Cheese Frosting
1 Stick Butter, at room temperature
1 Package Cream Cheese (8 oz), at room temperature
2-3 Cup Powdered Sugar, sifted
2 Tablespoons Heavy Cream
1 Teaspoon Vanilla Extract
1 Cup Caramel, microwaved for 30 seconds to soften
1/2 C Mini Chocolate Chips
1/2 C Heath Bits
Heat oven to 350 and line 2 muffin tins with cupcake liners.
Combine the first 5 ingredients (through apple butter) and mix well with a hand mixer.
Fill each cupcake liner 2/3 of the way full. Bake 18-20 minutes or until a toothpick comes out clean.
In a standing mixer or with a hand mixer, blend butter and cream cheese together until smooth. Add powdered sugar one cup at a time, blending after each one until you reach a thick frosting consistency. Add heavy cream and vanilla and blend. Add more cream if the frosting is too thick or powdered sugar if too thin. Chill before frosting.
Frost cupcakes with cream cheese frosting, drizzle with caramel and top with mini chips and Heath bits.
