Hip Korean Cuisine Coming to Westfield When Roosterspin Opens This Summer

WESTFIELD, NJ – The owner of one of New York City’s hottest restaurants is gearing up to launch a sister establishment called Roosterspin here in Westfield this summer.

Mihae Cho, who owns Mono + Mono in the East Village with her husband, plans to open her new venture in early August next to the train station at 251 North Avenue West, the space once occupied by Cheeburger Cheeburger and, most recently, Burger Palace. She decided to open her new restaurant here after falling in love with Downtown Westfield on her first visit.

Roosterspin, which “will incorporate industrial atmosphere and vinyl record music theme and live jazz music on weekends,” according to Cho, will be similar in style to Mono + Mono and will offer the signature Korean fried chicken that put its predecessor on the culinary map.

“The menu will be Korean fusion featuring both classical and modern approaches and, yes, we will serve the Korean fried chicken,” Cho said. “The executive chef from Mono + Mono took the position at Westfield.”

A very popular dish in South Korea, Korean fried chicken has become a sensation in the New York area and in California. Despite the name, it is unlike the Southern style fried chicken many Americans are familiar with.

“We use a double-frying technique to takes the fat and grease away from the chicken and brings [out] ultra-crisp chicken wings with eggshell-thin crust [that's] juicy inside,” Cho said. “Then it’s hand-brushed, piece by piece, with our savory sauce, soy-garlic or hot sauce.”

Executive Chef Hyun Han is a graduate of Hattori College in Japan and brings with him more than a decade of experience in the kitchen, Cho said.

The restaurant will not have a liquor license, but will offer wine by the bottle from California’s Domenico Winery.
