Today I am grateful for bacon.  I don’t want to be grateful for bacon.  I want to hate bacon.  I want to think that bacon is evil and that no pig should have to be sacrificed for me to have bacon.  But I don’t.  I don’t have it often, but I love bacon.  I’m a bit of a carnivore, but I know a lot of vegetarians and wondered if I could pull that off.  But there would be no bacon.  Forget it.

Most times I cook bacon in the microwave, but if I’m making it for a crowd I’ll put it in the oven.  I never just fry it on the stove like my mom did.  Sometimes, when I’m peeling it apart I think it’s sort of disgusting.  Then it starts to cook and the aroma wafts through the house like nothing Glade could ever dream of capturing.  I can wake my husband up if I cook bacon and he could sleep through a nuclear explosion.

Although the only camping I plan on doing any more is at the Holiday Inn, I do remember the days when we camped and I would cook bacon for breakfast.  Everyone, at every camp site cooked bacon for breakfast.  The entire campground smelled like a smokehouse.  Can you smell it, yet?  Ooooo, yes.

So today I am grateful for bacon.  Sorry if you’re a vegetarian, vegan or just plain anit-meat.  I’m not trying to convert you and I’m not trying to skeeve you out, but hey. . .it’s crispy, crunchy, salty, fatty bacon.  What’s not to love?

Each and every day I find something to be grateful for. My gratitude's are heartfelt, personal, moving and often humorous. Facebook followers have encouraged me to branch out. I hope you will relate.
